Sea trout is one of many treasures of the rich Atlantic right at our doorstep. Unfortunately nicknamed `weak fish` ironic for something so delicious. Far from bland, this creamy, coral-fleshed, wild caught fish is a meaty, flaky offering with a firmness that holds up to the cast-iron sauté pan. Its subtle sweetness and unmistakable ocean flavor are brought out nicely by a preparation of sherry, butter, and herbs.
